Spicy Chickpeas

2 T. peanut or veg. oil2 medium onions, peeled and minced8 cloves garlic, peeled and minced1 T. ground coriander seed2 t. ground cumin seed1/8 to 1/2 t. ground chile or cayenne1 t. ground turmeric1/2 c. chopped tomatoes4 c. cooked chickpeas2 t. ground roasted cumin seeds1 T. ground amchoor2 t. sweet paprika1 to 2 t. garam masala1/2 t. salt, or to taste1 T lemon juice, or to taste1 fresh hot green chili, minced2 t. finely grated fresh ginger
Saute onions and garlic in oi until soft. Add coriander, cumin (not roasted), chile and turmeric. Stir together and then add tomatoCook together for a minute or as, then add drained chickpeas and 1 cup water. Add the ground roasted cumin, amchoor, paprika, garam masala, salt and lemon juice. Stir again, then cover , reduce heat and simmer for 10 minutes. Remove cover and add minced green chile and ginger. Stir and cook, uncovered, for another 30 seconds or so.
