1 lb. Ground Pork1 medium Onion, diced1.5 Red Pepper, diced1 stalk Celery, diced 1 Jalapeño Pepper, finely diced1 Tbsp. Olive Oil1- 14 oz (398 mL) can Diced Tomatoes1- 5.5 oz (156 mL) can Tomato Paste1- 19 oz (540 mL) can Kidney Beans, drained and rinsed1 tsp. Chili Powder0.5 tsp. Paprika0.5 tsp. Cayenne Pepper
Sauté veggies in oil in large fry pan until crisp tender. Add pork and cook until no pink remains and a nice brown glaze forms in pan. Stir in seasonings, adjusting amounts to taste.
Meanwhile, in a large saucepan combine tomatoes, tomato paste, and beans. Cook over medium- low heat, stirring often. Add pork and veggies, stirring to combine. Deglaze fry pan with 1/4 cup water, add to chili in saucepan.
Cook about 15 minutes to blend flavours, stirring often.
