4 Low Fat Sausages (Beef/Pork/Vegetarian)1 Tin Chopped tomatoes 1 Tin Mixed Beans (Kidney/1/2 Onion (White or Red) sliced 1/2 Fresh Red or Green pepper sliced 1 clove of garlic crushed2 tbs fresh basil - torn 1 tsp cayenne peper or paprika (optional) 1 tbsp Olive Oil 1 tbsp chopped Chilli (optional) Salt & Pepper - to taste
1. Grill the Sausages until cooked - cut into large chunks and leave to one side.
2. Heat oil in a large pan (with a lid) and soften the garlic, onion and pepper until starting to colour.
3. Add tomatoes, tin full of water, mixed beans and chilli & cayenne or paprika (if using) - bring to the boil.
4. Reduce the heat to a simmer and add half the basil and sausages - simmer for approximately 15 minutes.
5. Check seasoning and add remaining basil, allow to wilt.
6. Check seasoning and serve.
