Stuffed Chicken Parmesan

4 boneless, skinless chicken breasts4 slices deli ham4 slices provolone cheese3 eggs, slightly beaten1 c Italian bread crumbs1 c Panko bread crumbs1 c flour3/4 c olive oil1 c pasta sauce2 c shredded mozzarella
Carefully slice breasts in half, leaving a hinge (like a butterfly). Place one slice each of ham and cheese in each breast. Close breasts and set aside.
Set up your breading station. First- flour; then- eggs; last-mixed bread crumbs. Dip each breast in the flour, then egg and finally breadcrumbs. Set aside. Heat the oil in a skillet. Fry both sides of the chicken until golden brown. Place in baking dish. Pour sauce over top and sprinkle with mozzarella cheese. Bake at 350 for 20-30 minutes. Makes 4 servings.
