Ingredients
Directions
- 2/3 cups all-purpose flour- 1 / 4 cup walnuts (can be substituted by almonds)- A handful of raisins (can be substituted by dried cranberries)- 1 cup white oats- 1.5 tablespoons honey- 1 apple worth of apple sauce (about 1/4 cup)- 0.75 teaspoon baking soda- 0.5 teaspoon cocoa powder- 1 teaspoon granulated sugar - 1 teaspoon vanilla extract- nutmeg- cinnamon
Mix in a bowl the flour, oats, baking soda, sugar, cocoa powder, a sprinkle of nutmeg and about half a teaspoon of cinnamon.
Make a hole in the dry mixture and add the apple sauce ( I made homemade apple sauce) , the honey and the vanilla extract.
Mix the ingredients together. I used my hand for this one because the dough is quite stiff and hard.
After you have the stiff but sticky dough, add the raisins and walnuts ( or any other substitute you decide to use) and mix well.
Preheat over to 180ºC.
Line the tray with non stick baking sheets and add 1 tablespoon of the dough per cookie, making sure to spread the dough since it will expand while cooking.
Cook for about 8 minutes till the bottom is golden brown and the top is still soft. Let the cookies cool down for a couple of minutes and store.
Enjoy your extremely low cal oat cookies!
