Tiramisu Parfait (Whole Food Version)

Ingredients
Filling 1:300 g Cottage Cheese 4%170 g Light Quark 0.3%3 pastured organic egg yolks1 tsp vanilla extract6 pitted datesFilling 2 (Cookie):50 g Shredded Coconut 50 g Almond Flour50 g Hazelnut Flour2 tbsp maple syrup2 tbsp barley cup or coffee mixed with a bit of hot waterTopping:1 tsp cocoa powder
Directions
Mix all ingredients for filling 1 in a blender or food processor. Then mix all ingredients for filling 2 together, either with a food processor or just mix with a spoon. Then layer some of filling 2 and layer 1 in glass dessert cups ending with layer 1. Sprinkle a little bit of cocoa powder on top.
