Rice, fried with vegetables

Ingredients
White Rice, long grain, 1 cup Soy Sauce, 2 tbsp low sodium Scallions, raw, 1 cup, chopped Green Peppers (bell peppers), 0.5 cup, chopped Celery, raw, 2 stalk, large (11"-12" long) Mushrooms, fresh, 1 cup, pieces or slices Egg, fresh, 2 large Garlic, 1 clove or I tsp of minced garlicOlive Oil, 2 tbsp
Directions
Mix day old cooked white rice with soy sauce, toss until uniformly colored.
heat the oil in a large wok, add garlic and fry until fragrant. Add chopped vegetables and stir fry rapidly.

Add the eggs and continue to cook until the eggs are scrambled and mixed with the vegetables.
Add the rice, saute until heated through and thoroughly mixed.
