2.25 pounds 85% lean ground beef4 dry cups of pinto beans (8 cups cooked)1 large onion, dicedLOTS OF chili powder, cumin, coriander, salt, pepper, and garlic
Place beans in clean water (10 cups) and boil with a raw potato or carrot for 2 hours on low. Discard carrot/potato. Rinse beans, return to pot. Add 10 cups clean water, and boil again on lowest setting 2 more hours. After 4 hours fry meat in a nonstick skillet. Add onion and spices when meat is done (if too much oil, drain before adding onion and spices). You can lay the spices on THICK for simple chili. Let the flavors go crazy! After onions are done, add meat mixture to beans. Boil another 30 minutes-1 hour, and enjoy with cornbread and grated cheese!
