creamed asparagus on toast

Ingredients
2 cups asparagus, chopped1/2 tbs butter1 tbs flour1/2 cup skim milksalt and pepper to taste2 pieces wheat toast
Directions
blanche the asparagus, drain.
in same saucepan, melt butter. add flour and mix to a roux
whisk in milk, simmer until thickened.
add salt and pepper to taste
mix in cooked asparagus until heated thoroughly.

Serve on two pieces wheat toast

    Everyone else loved this recipe... My fresh asparagus was very thin. Maybe I did not chop fine enough. I liked the high protein of this recipe. I only used 1 cup of asparagus and it was still plenty for two pieces of toast. It was too crunchy and all asparagus with a little cream sauce. - 1/11/11

    This is really good and my kids liked it. I have also done this with a can of drained tuna instead of the asparagus. We call it Cream Tuna on Toast. - 4/23/08

    I've tried this with cheese sauce instead of cream sauce. It's wonderful - and you have the added benefit of getting your protein that way. My grandmother and I used to make this when asparagus was fresh and in season. - 4/5/08
