1 Can Cannellini or other white bean1/2 Large Avocado1 C Frozen Edamame1 C steamed Carrot (Colors Matter for appearance)1 Medium Sweet Onion.5 C Lemon Juice1/4 C Extra Virgin Oilive Oil2 Tbsp Chopped Cilantro (or other favorite fresh herb)3 Cloves Garlic1 Tsp Salt1 Tsp Black Pepper
Steam Carrots to al Dente
Chop tomatoes and onion, Crush garlic.
Combine all ingredients in large bowl and toss well.
Serving size is 1/2Cup
Will keep for a couple of days only
