Ingredients

3 lbs round steak, trimmed cubed2 T olive oil1T flour6 medium russet potatoes, peeled 1/2 inch cubed 4 C fresh green beans (or frozen)7 oz can green chiles (or fresh if you have them)2 T chopped Roma tomatoes2 cloves garlic, minced10 oz canned tomatoes (with juice)8 oz canned red chile sauce* (Las Palmas)1/4 C water1 1/2 t ground cuminsalt and pepper to taste
Microwave cubed potatoes for 5 minutes
Brown steak (in olive oil) in heavy skillet over medium high heat
Sprinkle on flour and stir well
Stir in the microwaved potatoes
Stir in the rest of the ingredients, except green beans
Bring to a boil, lower heat and simmer 30 minutes
Add green beans
Continue to simmer another 10 minutes until meat is tender and sauce is thick
Serving Size: 10 servings
