Barley & Lentil Salad

Ingredients
1 cup pearled barley1 cup lentils1 medium red delicious apple1 onion, chopped1 bouillon cube1/2 green pepper, chopped5 figs, chopped3 oz. Ken's Balsamic Vinaigrette1 cup watercress, chopped
Directions
Dissolve bouillon cube in 2 cups of water, cook barley as you would cook rice. Meanwhile, fill medium pot with water, bring to boil. Add lentils and return to boil. Boil for about 10 minutes then reduce heat to simmer. Simmer for additional 10 minutes. In a large mixing bowl, combine the cooked barley and lentil and stir in the rest of the ingredients. Enjoy.
