Ingredients
Dry Ingredients1/2 c. Coconut Flour1 c. Flaxseed Meal2 tsp. Baking Powder1/4 tsp. Salt1/4 tsp. KAL Stevia Extract Powder1 tsp, cinnamon1/4 tsp. allspicepinch of nutmeg1/2 c. chopped walnuts, optionalWet Ingredients4 Large Eggs4 Tbsp. Coconut Oil Melted1 tsp. Vanilla Extract1/3 c. Coconut Milk1/4 c. unsweetened Applesauce (one individual serving of Mott's)
Directions
In a medium mixing bowl, sift together dry ingredients and set aside.
In another bowl, whisk together wet ingredients.
Whisk dry ingredients into wet ingredients, eliminating all clumps.
Divide batter evenly between 12 muffin tins lined and lightly sprayed with non-stick spray.
Bake at 350 for 25 minutes, or when a toothpick comes out clean.
Cool, serve & enjoy!
