Chicken Marbella

1/4 cup extra virgin olive oil1/4 cup red wine vinegar1/2 cup prunes (I used raisins)1/4 cup Spanish green olives1/4 cup capers with juice3 bay leaves, crushed8 cloves garlic, finely minced1/8 cup dried oregano2 lb. skinless chicken breasts1/4 c. brown sugar (not packed)1/2 c. dry red wine1/8 c. fresh flat leaf parsley, minced
Mix the first nine ingredients (olive oil through oregano) in large bowl. Add the chicken and stir to coat. Marinade in refrigerator overnight.
When ready to cook, preheat oven to 350. Arrange chicken in a roasting pan in single layer. Sprinkle with salt and pepper to taste. Sprinkle with the brown sugar and pour the red wine into the bottom of the pan. Cook for 50 minutes, basting frequently. Serve hot or allow to cool to room temperature. Serve with sauce (pan drippings).
I actually think the calorie and fat count in the recipe are high because not all of the olive oil, sugar, etc. is absorbed and eaten.
