Lentil Walnut Chili

Ingredients
2 C lentils (red)1/2 C chopped walnuts1.5 C diced canned tomatoes, including juice1.5 C chicken or vegetable stock1 onion diced1 TBL garlic1TBL chili powder1/2 tsp cumin1 tsp cayenne pepper1TBL honey
Directions
Cook garlic and onions over medium heat in 1 TBL olive oil until soft and browned. Add spices and cook briefly to bring out spice flavor. Add canned tomatoes and stock and honey and walnuts Let simmer for about 10-15 minutes. Add lentils and cook for an additional 20 minutes
