Ingredients
1 c. ground oats1 c. egg whites1 cup fat free cottage cheese2 tsp baking powder2 tsp truvia1 tsp maple extract
Directions
blend all in blender until smooth. lightly spray a griddle or pan with cooking spray and use a 1/4 measure for each pancake. cook on first side until bubbles appear and then flip and cook through.

Serving Size: makes 9 medium pancakes 3 pancakes are a serving

    It helps if you let the batter rest for a little bit before cooking, helps it thicken up and you get fluffier pancakes. Either way, these are *delicious*, and you'd never believe they are low-fat and healthy carb! - 3/3/15
