Easy Tortilla

Ingredients
1 whole wheat tortilla1/4 cup canned pre-cooked black beans1/4 cup onion1 tbsp cilantro1/4 cup tomato1/4 cup mozzarela cheese par skim1 tsp lime juice
Directions
Makes one serving - great for singles that want something fresh but do not want to waste ingredients.

Pre-heat oven to broil.

Chop onion, cilantro and tomato finely and mix together. Squirt 1/2 lime into mixture.

On tortilla, place black beans. Top with Cilantro mixture and shredded cheddar.

Place tortilla on cookie sheet. Place into oven for about 3 minutes. Take out and eat! Delicious and VERY easy.

    this was really simple and light meal. i did add 1 tsp tomato puree and low fat hummus instead of cheese. since i love spice so lots of chilli flakes. - 8/9/11
