Salad2 cans tuna packed in water.5 cup quinoa1 cup celery diced1 cup onion chopped1 can artichoke hearts chopped2 cups cannellini beans (cooked)1 cup frozen peas1 cup black beans (cooked)1 cup kale chopped==========================Dressing1 avocado diced4 tbsp. lemon juice2 cloves of garlic minced1/2 cup zesty Italian fat free dressing
Cook quinoa according to package directions. Drain and fluff.
Toss all salad ingredients together in a large bowl
Process avocado, lemon juice, garlic and salad dressing in a food processor until smooth.
Season to taste. Toss into salad.
Serve on a bed of romaine lettuce
