2 Boxes Jell-O instant Sugar Free, Fat Free Pistachio Pudding3 Cups Light Vanilla Soy Milk
Whisk together pudding mix and milk/creamer. Pour into ice cream maker and freeze according to machine directions. Ice cream will come out "soft serve consistency" frozen leftovers may be pretty hard, allow to thaw on counter for a few minutes, and throw some into a blender if you want a softer consistency.
