Curried Split-Pea Soup

1lb. dried yellow split peas, rinsed 2 smoked apple ,chicken sausage, diced (2-1/2 cups) 1 cup diced onion 1 cup diced carrot 1 cup diced celery fresh thyme sprigs 1 Tbsp. curry powder 1 Tbsp. minced garlic 1 tsp. each kosher salt and black pepper 4 cups low-sodium chicken broth cups water Tbsp. minced fresh thyme
Combine peas, ham, onion, carrot, celery, thyme sprig, curry powder, garlic, salt, and pepper in a 3- to 4-Qt. slow cooker; add chicken broth and water.
Cover soup; cook until peas are tender, on high-heat setting for 4-5 hours or on low-heat setting for 6-8 hours. Remove thyme sprig. Mash peas to thicken soup,
if desired. Stir in minced thyme.
