grilled buffalo chicken tacos

Ingredients
1 14 oz can chicken breast chunks (or 16 oz fresh chicken breast)1/4 cup cayenne pepper sauce1/4 cup butter4 large, soft corn tortillas (7 inch) (or use 6 of the smaller ones)1/3 cup chunky blue cheese dressing2 oz crumbled blue cheese1/2 cup shredded Mexican cheese blend1 cup shredded lettuce1 stalk celery, finely chopped
Directions
Spray a large skillet with cooking spray (optional if using a non-stick skillet)
Heat the skillet on high heat, and add the cayenne pepper sauce and butter. Stir until butter is melted, then add the chicken chunks and stir to coat the chicken.
Reduce heat to medium-high and cook 5 or 10 minutes until edges of chicken are starting to brown (make sure chicken is cooked through, if using fresh chicken) stirring occasionally.
While the chicken is cooking, preheat the grill and prepare the tortillas:
Dip the tortillas in water, then, on a large cutting board, spray one side of each tortilla lightly with cooking spray.
Turn the tortillas over and spread the blue cheese dressing, in a thin layer, on the other side, to within 1/4 inch of the edges.
Top the tortillas with the crumbled blue cheese, cooked buffalo chicken and Mexican cheese.
Carefully slide the tortillas onto the grill, and grill 3 to 5 minutes, until tortillas are golden brown and cheese is melted.
Carefully transfer to plates and add the shredded lettuce and celery.
Fold in half to eat like a taco, or just leave it flat to eat like a pizza. Yum!
