Pumpkin Coconut Bisque (Fitsugar.com)

Ingredients
Pumpkin, Coconut milk, unsweetened Veg
Directions
Roast coconut in oven at 400 (cut in chunks)
Sautee the veggies in olive oil
Mix everything together and bring to a slow boil
Zap with immersion blender (or in batches in a regular blender)
Garnish with pepitas
