Chicken Broccoli Soup

Ingredients
3 cups cool water1 small chicken drumstick (I had frozen drumsticks and used the smallest one in the bag)1 raw, peeled and finely diced potato- about 150 gramsDried Onion Flakes, 1 t. 1. c. Fresh Broccoli florets, finely chopped1/2 t. salt is optional, more or less as desired1 T. instant mashed potato, could be omitted- I used to thicken up my soup. 15 grams = 1 Tbsp.
Directions
Put water in small saucepan, remove skin from drumstick and add to pan. Add other ingredients except instant potato. Bring to boiling, Reduce heat and slowly simmer until chicken is cooked and potatoes are tender. About 40 minutes. Remove chicken drumstick and take the meat off the bone- put the meat back in your soup. Add the instant potato mix and stir well.

Serving Size: Lunch for One, or Appetizer for 2
