Whole30 Comfort Pie

Ingredients
Ingredients:◾3-4 Large Sweet potatoes, peeled and cut into 2 cubes◾2 cups fresh spinach◾2 gloves of garlic, smashed◾1 pound of organic ground beef◾1 small bell pepper chopped◾1/2 an onion chopped◾1/2 cup chopped carrots◾3 tablespoons of ghee, divided◾2 tablespoons coconut animos◾Salt◾Pepper

Directions:
1.Begin a pot of water boiling, add the cubed sweet potatoes and cook until you can easily break them apart with a fork. Usually about 8-10 minutes.
2.While the sweet potatoes are cooking begin to brown your ground beef in a pan on medium heat with One tablespoon of ghee. Once the meat is no longer red add carrots, onions and garlic and bell peppers. Cook until the carrots are soft. Season while cooking with the coconut aminos, salt and pepper. (donft be stingy with the flavors!)
3.Once the ground beef and carrots are cooked add the spinach to the mix. Stir the spinach in and wait for it to wilt. It looks like A TON when you add it but it really is ok, I promise. Remove from heat and set aside once youfve mixed in the spinach.
4.Now with a potato masher mush and mash the sweet potatoes.
5.Pre-heat your oven to 350.
6.In a pie pan begin by laying down a layer of sweet potatoes to act as the bottom of your pie.
7.Fill the pie with your ground beef and veggie mixture then cover the ground beef with a thick layer of the remaining sweet potatoes.
8.Use the final 2 tablespoons of ghee and place pats of ghee in various locations on top of the sweet potatoes
9.Bake for 35 minutes at 350. Serve warm.
