Spaghetti Squash with sauteed Vegetables

Ingredients
Directions
2 tbsp Extra Virgin Olive Oil1 medium Onion2 cloves Garlic3 medium Red Ripe Tomatoes2 tbsp fresh chopped Basil,1 Spaghetti Squash Black Pepper to taste2 dashes Salt or to taste
Preheat oven to 350.
Spray a baking sheet with oil.
Cut squash in half length wise & remove seeds.
Place squash cut side down on baking sheet & bake for 30-40 minutes.
Meanwhile chop onion & saute with olive oil over medium heat until tender.
Dice garlic & add to pan with onion. Cook approx 3-5 minutes.
Dice tomatoes & add to pan. Cook until warm all the way through.
Add salt & pepper.
Remove squash from oven.
Scrape inside with a fork to make noodle like strings.
Empty strings into large bowl.
Mix in vegetables & basil.
Serve immediately.
