Ingredients
1 tbsp margarine1/4 cup chopped onion2 tbsp flour1 cup chicken stock2 cup 1% milk2 cups chopped asparagus(cooked_
Directions
Saute onion in margarine until clear.
Add flour, salt and pepper. Add milk and chicken stock. Cook and stir until it boils and thickens.
Add asparagus to the sauce and run through a food processor until blended.
Serve hot with cheddar or parmesan cheese as garnish. Serves 2

    This is great - even my husband who isn't crazy about asaragus liked it! I doubled the recipe, and added chicken, and froze about half of it for simple meals later. I also used a little cornstarch to thicken it up just a bit more than the original recipe. - 10/13/08
