German Potato Salad (serving size 1 cup)

9 medium Potatoes (red or Yukon gold)4 eggs, hard boiled1 large onion, chopped2 pickles, chopped5 Tbsp oil (canola, corn, vegetable etc)3 Tbsp white vinegar1 Tbsp sugarsalt, pepper
Cover Potatoes with cold water, cover and bring to a boil. Simmer for approx. 20-25 minutes until the feel tender all the way though when pocked with a paring knife.
While Potatoes are boiling mix onions, pickles, oil, vinegar and sugar. Season well with salt and pepper. Add a bit of pickle juice to thin out dressing if necessary. Peel potatoes and slice (will make about 7 cups of slices). Mix with dressing and sliced eggs.
