Directions
Add 1 tbs oil to skillet and cook onion in hot oil for 3 minutes. Add sliced mushrooms and Stir fry mix and cook for another 3 minutes. Lower heat and let simmer 5 minutes. While it is simmering mix egg whites, water, sea salt, and pepper in a bowl. Pour egg mixture in and begin stirring until egg starts to cook, then stop. Cook 45-60 seconds more sprinkle goat feta then fold one half over. Serve.
