Spinach Quiche

1 Tbsp extra-virgin olive oil6 oz of fresh spinach1/3 cup sweet Vidalia onion, chopped1 clove garlic, finely chopped1/4 cup green bell pepper, finely chopped1 cup fresh mushrooms, chopped4 eggs1 cup 2% milk6 oz crumbled Feta cheese4 oz grated cheddar cheese1/4 tsp fresh ground black pepper2 oz grated Asiago cheese
Saute the onions, garlic, green pepper, mushrooms, and spinach in the olive oil, in a large skillet, until onion is tender.
Whisk the eggs and milk together, then mix in the feta and cheddar cheeses, pepper, and sautéed veges.
Divide into 8 lightly oiled baking ramekins (or use paper baking cups, if preferred).
Bake for 10 minutes, then top with asiago cheese and bake another 5 minutes or until the center is set.
Cool for 5 or 10 minutes before serving.
