Broccoli, Cheddar, Bacon Bacon Muffins

2 cups self-raising flour1 cup cooked broccoli, chopped fine1 cup shredded Cheddar1/2 teaspoon black pepper2 tablespoons Tastefully Simple's Bacon Bacon1 tablespoon flaxseed meal mixed with 3 tablespoons water3 tablespoons plus 1 teaspoon olive oil3/4 cup milk
Preheat oven to 400 degrees.
Mix flour, broccoli, half of the cheese, and seasonings in a large bowl. In a small bowl, whisk flaxseed mixture, olive oil, and milk. Add wet ingredients to dry ingredients in the large bowl, and mix until incorporated (will be the consistency of biscuit mix).
Spoon muffin mixture into muffin tins or liners (sprayed with non-stick spray), to make 12 muffins. Top with remaining cheese. Bake for 20-25 minutes, until cheese is lightly browned.
