Kale Soup

Ingredients
3 TBS Olive Oil8 garlic cloves1 medium onion, chopped8 cups chopped kale4 cups chicken broth2 cans white beans such as cannelini1 qt canned tomatoes2 tsp dried Italian herb seasoningsalt and pepper to taste1/2 cup bulgur wheatParmesan Cheese
Directions
Heat olive oil, add garlic and onion and saute until soft. Add kale and saute stirring until wilted. Add 3 cups of broth, 2 cups of beans and all of tomatoes, herbs, bulgur, salt and pepper. Simmer 5 minutes. With stick blender mix remaining beans with remaining broth until smooth. Stir into soup to thicken. Simmer 15 minutes. Ladle into bowls. Sprinkle with Parmesan Cheese.
