Cheesy Cauliflower Patties

1 head cauliflower1/2 cup cheddar cheese, shredded2 large eggs1/2 tsp cayenne pepper1 tbsp olive oilsalt
1.) Cut cauliflower into florets and cook in boiling water until tender (about 10 minutes). Drain.
2.) Mash while warm. Combine with eggs, cheese, cayenne pepper and salt.
3.) Heat oil in pan over medium high heat. Form mixture into patties about 3 inches wide.
4.) Cook until golden brown on both sides (about 3 minutes).
Serving Size: Make 8, 3 inch wide patties
