Orange Chicken

Ingredients
2 chicken breasts, boneless, skinless cut into strips1 large onion sliced2 cloves garlic, chopped1tbs olive oil3 tbs. dry sherry or 2 tsp. nonalcoholic vanilla2 tsp Dijon mustard1 tbs. sugar1 tbs. cornstarch1/4 tsp ground ginger1/4 tsp ground cinnamonsalt and pepper to tastecayenne to taste (optional)2 oranges, peel, seed and separate into segments3 tbs. parsley chopped2tbs. cilantro chopped
Directions
Saute onion in oil until soft and golden. Add garlic towards the end. Put to the side.

In a small bowl mix cornstarch, cinnamon, ginger, mustard. Add sherry and orange juice, blend well.

Cook chicken on all sides. Add onions and orange juice mix - stir. Season with salt and pepper and cayenne. Bring to a boil, reduce, simmer covered for 20 minutes. Add orange segments, parsley and cilantro. Cover 3 more minutes. Serve over brown rice.
