Pasta with Arugala Pesto

Ingredients
Pasta, fresh, spinach, 16 oz cookedArugala, 6 cups raw Oil: White Truffle, 1 tbspGarlic, 3 clove Extra Virgin Olive Oil, 1 tbsp Lemon, fresh squeezedParmesan Cheese, shredded, 2 tbsp *Pine Nuts, 1 tbsp toasted
Directions
Heat the olive oil in a large skillet. Saute the garlic in the warm oil for about a minute or two. Saute the arugala briefly, just to wilt the leaves. Blend the arugala with the truffle oil, lemon juice, cheese, and pine nuts. A little cooking water from the pasta may need to be added to thin the pesto slightly. Serve over warm cooked pasta.
