Chicken & Cheese enchiladas (casserole style)

Ingredients
1/2 cup onion, chopped2 large chicken breasts, already BAKED and sliced thin or shredded (We smoke ours)1/2 c. cheddar cheese, shredded (save 1/4 c. of this for topping )1/2 c. picante sauce3/4 c. Taco Sauce2 TBSP cream cheese1/2 tsp ground cumin8 white corn tortillas cut into strips
Directions
Pre heat oven to 350.
In a large skillet, saute onions in a little bit of olive oil or water until tender. Add 1/4 cup of the cheddar cheese, picante sauce, taco sauce, cream cheese, cumin and taco sauce. simmer until cheese is melted.
prep a 9x 13 with a dash of extra picante sauce, just to cover the bottom, then layer ingredients:
Tortilla strips, then chicken, another layer of tortilla strips, the skillet mixture. Top with remaining cheddar cheese.
Bake at 350 for 20 minutes or until bubbly.
