Potato, Spinach & Mushroom Saute

1/2 tablespoon of olive oil2 cloves of fresh garlic, finely chopped or minced1/2 cup chopped onion2 small potatoes, scrubbed, unpeeled and diced1/2 teaspoon of ground cumin2 cups of sliced fresh mushrooms5 cups (about 5 ounces) of fresh spinach leaves1/4 teaspoon salt1/8 teaspoon black pepper
Place the olive oil in a large skillet and heat
Add garlic, onion, potatoes, and cumin and stir fry for 2 - 3 minutes.
Add the sliced mushrooms and continue to cook at medium temperature until mushrooms begin to release their juices.
Add the spinach and stir fry until spinach is just wilted.
If skillet becomes dry, add a small amount of water to keep things from sticking.
Serve hot.
Serving Size: Makes 4 1-cup servings.
