Bacon, Broccoli & Pepper Fritata

Ingredients
4 cups Egg Substitute2 cups broccoli, finely chopped1 cup red or green pepper, sliced thin1 small red onion, sliced thin2 cups low fat Cheddar cheese, shredded10 slices Canadian Bacon, shredded1 tsp garlic powder1 tsp cajun spiceSalt & Pepper to taste
Directions
Blanch the broccoli for 3 minutes in boiling water. Cool in ice water to stop the cooking.

Mix all ingredients, except the cheese, together and pour in a 10 x 15 baking dish that has been sprayed with cooking spray. Sprinkle the cheese evenly over the top. Bake at 350 degrees for 30 minutes, or until set in the middle.
