brown rice pilaf

Ingredients
1 teaspoon olive oil.5 yellow onion, finely diced1 cups brown rice2 cups low sodium vegetable broth
Directions
1. Heat olive oil in a medium saucepan over medium heat. Add onion and dry rice and cook for 2-3 minutes, stirring often.
2. Add broth and bring to a boil over medium-high heat. Reduce heat to low, cover, and cook 30 minutes or until liquid has absorbed. Remove from heat and let sit for 5 minutes before serving.
