black bean quesadillas

1 Tablespoon grapeseed oil˝ yellow onion, diced3 clove garlic, minced1 red bell pepper, diced1 (15 ounce) can organic blackbeans, drained and rinsed2 teaspoons cumin2 Tablespoons lime juice (1 lime)5 raw tortillas1 2/3 cups shredded cheddar cheese
1. Heat oil in large skillet over medium heat. Add onion, garlic and bell pepper and sauté for 5 minutes.
2. Add beans and cumin and heat through.
3. Remove from heat and add lime juice.
4. Spread filling over half of each tortilla, top with cheese and fold over.
5. Heat a non-stick grill pan over medium heat. Cook each quesadilla 3-4 minutes per side until warmed through and crispy.
6. Cut each quesadilla in half to serve.
Serving Size: makes 5 quesadillas
