Cauliflower salsa

Ingredients
1 medium head of cauliflower Juice of one lime 2 medium ripe tomatoes ½ red onion, cut in half1 clove of garlicHalf of a bunch of cilantroSalt to tasteFresh jalapeño pepper, as much as desired. I usually use half with seeds removed
Directions
Process all ingredients in a food processor. Ideally cauliflower should be chopped separately as well as tomatoes. Stir all ingredients together in a large bowl. Salt to taste. Add more lime juice to taste. Cover and refrigerate.
