Honey Dijon Potato Salad (warm)

Ingredients:2-2 1/2 pounds of small red potatoes, quarteredSalt & freshly ground Pepper to taste1/4 cup honey1/4 cup Dijon mustard2 tbsp cider or white vinegar1/2 cup of red onion, chopped4 ribs of celery (including leaves) chopped1 cup of flat leaf parsley leaves, coarsely chopped
Cover potatoes with cold water. Add salt and bring to a boil. Boil until potatoes are just tender, 12-15 minutes. Drain.
Meanwhile, combine the honey, dijon mustard, and vinegar in a bowl, then slowly whisk in the olive oil. Season with salt & pepper. To the bowl add onion, celery, parsley and hot potatoes. Using a wooden spoon, break up the potatoes into chunks and mix well. Adjust salt & pepper to taste.
Toss the potato salad, then serve.
