Chicken & Black Bean Burrito

Ingredients
2 Chicken Breasts (approx. 7oz)4 tsp of Extra Virgin Olive Oil1 Cup of Chopped Onion2 tsp of Ground Cumin1 tsp of Chili Powder1/2 tsp of Ground Coriander2 Small Tomatoes Roughly Chopped1 Can of Black Beans1/2 Cup of Fresh Cilantro2 tps of Fresh Lime Juice6 Tortillas
Directions
Grill Chicken Breasts (I use the Foreman Grill) & then chop into pieces.
In a large non-stick pan over med heat, cook oil & onions for 1 minute.
Add Cumin & Ground Coriander, cook for 4-5 minutes, stirring often or until onions are tender & spices are fragrant.
Stir in tomatoes, cook for 1 minute or until very soft.
Stir in chicken & beans & cook, stirring for 2-3 minutes or until heated through.
Stir in fresh cilantro & lime juice.
Remove from heat.
Serve on the tortillas
