Ingredients
6 cups brown rice, cooked and cooled (from 2 cups raw)10 medium tomatoes1 bunch each fresh parsley and mint, finely chopped6-8 large scallions, sliced thinly1/4 cup each lemon juice and olive oil2 teaspoons salt2-5 cloves minced garlic, to taste
Directions
Mix all together in very large mixing bowl and adjust seasoning to taste.
