Vegan Spinach Curry

Ingredients
1 cup Onion, chopped2 cloves Garlic, minced1 Tbsp Curry Powder1 Tbsp Olive Oil1 (8oz) can Tomato Sauce1 pkg frozen Spinach, thawed and sqeezed dry1 (16oz) can Garbanzo Beans, rinsed and drained, divided1 cup water1/4 tsp Salt1/4 tsp Pepper
Directions
Cook onion, garlic, and curry powder in the oil for 3-4 minutes in a non-stick skillet. Stir in the tomato sauce, spinach, and 1 cup garbanzo beans. In a blender, combine the water and the remaining garbanzo beans and liquify. Stir the blended mixture into the skillet. Sprinkle with salt and pepper, and cook and stir until the mixture is heated through.

Serve over couscous or rice if desired.
