gr. turkey 1 lb.Gillian's gluten free stuffing mix 4 servings worth see package1 egg1 chicken boullion cubeleftover mashed potatos (1/4 cup tops each muffin loaf)
Take one pound of ground turkey, season with instant onion or fresh. Measure out carefully 4 serving worth of stuffing mix and soften with 1/2 cup hot water in which you have dissolved the chicken boullion cube. I microwaved the stuffing and boullion mix for 1 minutes to speed up the absorption process because the stuffing mix is hard and dry.) Mix this in with the turkey adding one large egg. Mix well. Using a muffin tin, fill each with 1/8th of the entire mix. I used a weight watchers scale to get it equally divided). Place in oven at 350 dgrees for 35 minutes. Pull out tray and top each muffin loaf with 1/4 cup of homemade mashed potatos. Pop back in oven for up to 20 minutes more. 2 Muffin loaves is one serving for 245 calories. These freeze well. Just reheat in microwave when you need them for a meal.
