Ingredients:4 medium red potatos boiled and cut into small pieces.2 stalks of celery cut into small pieces1/2 cup of egg beaters scrambled and chopped into four pieces1 onion chopped into pieces1 medium green bell pepper3/4 cup of light mayonaise1/2 teaspoon salt1/4 teaspoon black pepper2 teaspoons Dijon mustard
Mix the mayonaise, mustard, onion pieces, celery pieces, green pepper pieces, salt, and pepper together.
Then mix in the potatoes and scrambled egg pieces.
Chill in the refrigerator until you are ready to serve.
Serving Size: This makes 6 large servings.
