Cream together1 stick softened butter1/4 cup packed brown sugarAdd1 tablespoon vanilla extractMix well - then add1/4 cup white rice flour3/4 cup oat flour1/2 cup finely chopped pecansForm in to 3/4 to 1 inch balls - cool cookies on tray in fridge for 5 minutes - bake at 350 degrees 13-15 minutes. Cool on wire rack. Added options: roll in powered sugar or dip half the cookie in melted dark chocolate chips.
Cool formed dough balls on a cookie sheet in the refrigerator for 5 minutes. Bake at 350 degrees for 13-15 minutes. Cook baked cookies on wire rack.
