Potato Soup Light

Ingredients
Directions
2 Large potatoes Cubed 1 Medium White Onion (really any color is ok) rough chopped 3 stalks of celery rough chopped Salt, Pepper, and garlic to tasteWater
Chop all solid ingredients and add to large sauce pan. Fill the pan almost to the top with water.
Add Salt Pepper, and garlic
Bring to a boil
Reduce heat & simmer until most of the water has reduced
Add water again and simmer until water is half gone. Taste and add more seasonings if desired
Serving Size: Make 3 large bowls
