Oatmel Muffins

Ingredients
1 1/2 cups quick oats1 cup all purpose unbleached flour1 TBSP baking powder3/4 tsp salt1/2 white sugar 1 cup water1/2 cup canola oil1 egg, slightly beaten
Directions
Preheat oven to 395*F. Using regular size muffin tin line with paper or foil liners.

Mix the first set of ingredients (oats, flour, baking powder, salt and sugar) in a medium bowel; set aside.

In smaller bowel mix water, canola oil and egg. Stir water mixture into oat/flour mixture. Immediately drop into paper lined muffin tin. Bake 18 - 20 minutes or until VERY lightly golden.

Yields: 12 regular sized muffins.
