Lentil & Sweet potato soup

Ingredients
1 large onion chopped1 large sweet potato peeled and chopped2 carrots peeled and chopped1 cup lentils 1 Tbls olive oil3 cups chicken stock1 tsp curry powder2 cloves garlic mincedsalt & pepper to taste
Directions
Heat the oil in a soup pot. Add the onion saute over medium heat until golden, about 10 minutes. Add the water, followed by the lentils, sweet potatoes, carrots, garlic and seasonings. Bring to a rapid simmer, then lower the heat. Cover and simmer gently until the lentils are mushy and the potatoes are done, about 20 to 25 minutes. If the soup is too thick, adjust the consistency with a small amount of water. Puree all ingredients in blender and serve hot over steamed greens or brown rice or alone. Recipe can easily be made vegan with the substitution of vegetable stock or water instead of the chicken stock. Recipe is similar to traditional dal.
